Garlicky Sautéed Spinach

Spinach sautéed with garlic is a classic Italian preparation.  There are several versions of this dish on the web if you look around.  Here is a quick and simple recipe to start you off. It literally takes 5 minutes or less to cook. If you enjoy citrus flavors, you can also squeeze a lemon half over the top, toss well, and serve.

Is Spinach Good For You?

Ingredients:

2 pounds pre-washed baby spinach
2 tablespoons olive oil
1 tablespoon minced garlic
Salt and freshly ground black pepper

Preparation:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the garlic and cook, stirring constantly, until fragrant, about 2 minutes.

3. Add the baby spinach (if all the leaves don’t fit in the skillet at first, add more by the handful as they wilt) and sprinkle with 1 tablespoon water.

4. Turn the spinach with tongs until all the leaves are wilted and the garlic is evenly distributed.

5. Season the spinach with salt and pepper to taste and serve.
